While Tsujita gets the lion’s share of attention for its perfectionist practices with tsukemen ramen these days, the owner of Hollywood’s Ikemen, Shigetoshi Nakamura, counts on a space-aged water filtration system. Today, he tells The L.A. Times his current obsession is the water being used here, "a filter that removes 100% of all excess substances in the water – everything from chlorine to radioactive toxins. This also happens to be the same filter NASA astronauts use in space." Shigetoshi goes on to say, "water is the foundation of all cuisine, the first step to good food." [LAT]
