Some news from the budding empire of Scott Youkilis (Maverick, Hog & Rocks, the unnamed upcoming BBQ/hof brau thing on 19th Street): A couple of weeks back SFoodie reported that Maverick chef de cuisine Matt Brimer, he of the butter burger, was on his way out, and now Youkilis has confirmed his replacement: Emmanuel Eng, who had been a sous chef at Sons & Daughters. But that’s not all! As the Scoop is reporting, Youkilis has also hired bar star Scott Beattie (Spoonbar, Mateo’s Cocina Latina, the upcoming Plum Bar) as well as Erika Frey (who succeeded Scott at Cyrus’s fancy bar in Healdsburg) to revamp the bar program at one-year-old Hog & Rocks.

Frey will take over as bar manager later this month, and she and Beattie are collaborating on the new cocktail list, which should definitely prove a little more upscale and complicated than the back-to-basics, Collins-and-Hurricanes menu that the restaurant launched with. They’re saying, for now, that it will be a “mix of classics and Beattie’s signature seasonal specials.”

As for Eng taking over at Maverick, expect a new menu there by next week, sticking in the same vein of regional American cuisine, but likely with some new twists.
