What to Expect at Marcona, Opening on Melrose in Mid-October

Collier Ulrich and chef Matthew Moss are readying their new sandwich shop, Marcona, looking towards an opening on Melrose in mid-October, after more than a year of development and construction. According to the restaurant’s reps, the facade and interior design are nearly done and next week, the kitchen equipment is expected, while the end of the month will bring all the dreaded inspections that have consigned many an opening dream into a holding pattern purgatory. What’s the concept here?

Marcona will be a counter-service sandwich shop that nods to the East Coast model (now we’re dying for a White House sub), as Ulrich is a former Gothamite himself.

While a Facebook page is tracking the day-to-day progress, and comes stuffed with sandwich, wrap, and sub photos, the restaurant has also added a sample menu to its website, revealing the strong Spanish influences found here (like everyone else around here, they probably prefer to be called “Mediterranean”) in offerings like turkey albondigas with manchego, lomo spiced pork cheek, an egg sandwich with piquillo, and Spanish gyros with merguez. Sounds pretty off-the-hook, even if any plans for a Jose Andres sandwich might have already been snapped away by another Melrose sandwich chef.
