Traci Des Jardins Reflects on Her Protégés, Enjoys Michael Hung’s Revamped Bushi-Tei

For her regular column on the new Huffington Post San Francisco, chef Traci Des Jardins pays a visit to the restaurant of one of her protégés from Jardinière, Michael Hung, who recently took over the kitchen at Bushi-Tei. She notes its proximity to a place where she had her first chef job in S.F., at the Miyako Hotel, doing Japanese fusion under the tutelage of Elka Gilmore. And though she says little about Hung’s food besides it being “magnificent” and stylistically somehow similar the Miyako two decades ago, she does do a little horn-tooting about other success stories among the people who’ve been her sous chefs and pastry chefs over the years, including Richard Reddington, Chris Cosentino, Robbie Lewis, Douglas Keane, Deepak Kaul, and Elizabeth Falkner.
