Davis Square’s Posto, owned by the same folks who are going to take over Gargoyles and turn it into a Mexican restaurant, have one more thing to celebrate: They’re certified! Certified to sell authentic Neapolitan pizza, that is.
They’ve been endorsed by the AVPN (that’s Associazione Verace Pizza Napoletana to you) as an “official Neapolitan pizzeria”; it’s the only restaurant in New England with the distinction.
So rest assured that, if you visit, you’ll enjoy hand-kneaded pizza baked in a wood-fired, domed oven at 485°C for no more than 90 seconds, less than one-third of a centimeter thick. Think thin, crispy, and blisteringly hot.
Hopefully this bodes well for the Posto team’s next venture! Is there some kind of burrito certification process, too?
