Gearing up for next week’s first Baja Culinary Festival, four prominent Mexican chefs discuss the importance of this state within the country’s diverse culinary scene. While Tabasco chef Aquiles Chavez flat-out calls Baja California, “the gastronomic center of this country,” Yucatan’s Arturo Fernandez says of the peninsula, “This is our store where the best products are coming from. This is where Mexico goes to shop for its seafood.” Both chefs, and many more Mexican and international chefs, will be cooking at Saturday’s culinary festival in Tijuana (psst, tickets are only $15).
