Bacaro’s Santos Uy Plans Papilles in Los Feliz

Food GPS reports that Santos Uy, the founder of wine bars Bacaro and Mignon, will open Papilles on Franklin in Los Feliz, inspired by his trip to Paris. The restaurant will be another in the imported “bistronomique” movement that Jet Tila introduced us to and that Walter Manzke is basing his forthcoming Downtown bistro on, the concept involving rustic French bistro dishes unrestrained by traditional dogma and lead by regionally procured produce and affordable price points. So where is Santos heading?

The restaurant, which will have an as-yet-unnamed star chef, will take over Raffallo’s Pizza with 24 to 30 seats and possibly three-course, pre-fixe menus that vary between $25-$40, depending on what’s being served. And of course, Uy being Uy, you can expect a tight selection of wines, with a likely emphasis on Beaujolais and Eastern European vintages, in a casual setting. We’re not sure who the chef is, but you can see a few of the dishes at Food GPS, while Uy has a website, with a blog detailing the project, now online.
