A tipster e-mails to say that following David Santos’s exit, Hotel Griffou has a new chef: Mark Strausman, who comes from Fred’s at Barneys New York. Our source is skeptical about the change, writing, “So now they want to be a clubby environment, with a speakeasy-vibed cocktail list, with a French name like Griffou, serving rustic Italian food.” Interesting indeed.
