Former Talula’s Table Chef Takes Over Talula’s Garden; Le Virtu Gets a New Pastry Chef

So it seems Aimee Olexy and Stephen Starr didn’t have to dig too deep to find a replacement for Michael Santoro, the chef that we told you last week packed his knives and split from Talula’s Garden. The Insider reports that the restaurant’s new top toque is none other than Matt Moon, who previously helmed the Talula’s flagship in Kennett Square up until a few weeks ago, when the Garden’s sous chef, Chris D’Ambro, took the reins at the Table. In other chef news, E. Passyunk Ave’s Le Virtu announced that it recently appointed Angela Ranalli as Pastry Chef. Ranalli literally grew up baking Italian coolies and pastries with her siblings and mother, who used to sell their home-baked sweets at flea and farmers markets throughout the region. Following her studies in the pastry program at the Art Institute of Philadelphia’s culinary school, Ranalli worked for Michel Gras at La Patisseri in Cape May and at the The Waterworks. At Le Virtu she plans modernize classic Italian desserts.
