Pink Taco Scores a Matsuhisa Vet

Vernon Cardenas, the former corporate executive chef for Innovative Dining Group’s BOA, Katana, and Sushi Roku, has a brand new gig as the new chef at Pink Taco. Cardenas, a native of San Diego who was raised in Japan, worked at Matsuhisa in the past before taking a head chef position at Bokaos and opening three restaurants in Japan. With Japanese, Spanish, and Mexican heritage in his background, Cardenas is mixing things up already with new dishes like terriyaki mule and Eeyore tonkatsu a pork belly taco using sake and soy sauce!
