Garces’ Tinto Runs With the Bulls

Spain’s annual San Fermin festival kicked off yesterday, putting hundreds of foolhardy folks in harms way as they try to outrun hulking steers in the Running of the Bulls. Closer to home, Iron Chef Garces took the opportunity to introduce a new San Fermin tasting menu at his Basque country-inspired wine bar, Tinto. The $65 prix fixe, which features a selection of pinxtos and other small plates that pay homage to the Northern Spanish city, will be available through the end of July. Some highlights include house-cured Chorizo Pamplona with egg salad and pickled guindilla; white asparagus with jamón Serrano, Spanish olives and chives; and Chuleta, prime dry-aged sirloin with patatas riojas and veal jus.
