Wealthy Meat-Eaters Stomach the Idea of Eating Vegetables

Everybody is familiar with the concept of “Meatless Mondays,” right? The idea being that even if you’re not a vegetarian or a vegan or something, you can still avoid eating meat on Monday for reasons of health, ecofriendliness, and blah blah blah. Well, according to the Times, that radical concept is now catching on in Aspen, where even the trendiest jet-setter used to fly in and, apparently, demand a meal of dead-animal flesh upon touchdown: “It’s very interesting, but for some reason when people come to Aspen, they want to eat meat,” the manager of Syzygy tells the paper. But no more! Now a bunch of restaurants there are stickin’ some veggies on the menu. And yet! Some chefs remain skeptical of plant-based sustenance: “It’s something you need to study,” says one Aspen chef whose menu includes osso buco and liver. Also, the local government is getting involved for some reason? They’re just carrots, people. [NYT]
