Big news today as Grub Street catches word that former Rubicon chefs Stuart Brioza and his wife and pastry chef Nicole Krasinski are opening their own restaurant on lower Fillmore called State Bird Provisions. They’ll be taking over the Mozart Café space at 1529 Fillmore Street, behind the Fillmore Auditorium. Many will recall that Brioza and Krasinski were named 2005 Rising Star chefs by the Chron while still at Rubicon, and Brioza was named one of Food & Wine’s Best New Chefs in 2003. After the closing of Rubicon (now known as Wayfare Tavern) in 2008, Brioza’s been on a bit of an extended hiatus from full-time kitchen work, and doing private cheffing along with Krasinski. Fans of their food should be pretty excited at this new development. We’ll put this opening out at least four months, to fall, but until we get Brioza on the horn, file this under DEVELOPING. [Grub Street] Update: Here’s the low-down.
