Someone’s In the Kitchen With Chef Zama, and He’s Cooking White Snails!

A couple weeks back Grub Street mentioned that Bibou’s Pierre Calmels had teamed up with Zama’s Chef Hiroyuki “Zama” Tanaka to create a signature Bibou Roll that features French white snails, haricots verts, fennel maki, and topped with edamame. As with the Vetri roll that came before it, proceeds from sales of the Bibou roll are being donated to charity. In this video, Calmels and Zama team up in the kitchen to demonstrate how the roll is made.
