Top Chef Kevin Sbraga Spells Out Some Details on His Forthcoming Restaurant

Many of the details remain up in the air, but one thing’s for certain: Kevin Sbraga is super stoked about his soon-to-be eponymous restaurant. With a resume that reads like a who’s who of culinary awesomeness — Starr, Garces and Perrier are just a few of the previous employers listed — the Top Chef champ says up until this point, he’s felt like his creativity has been constricted and confined by his bosses’ concepts and visions. His forthcoming spot in the Symphony House, which he expects to have opened this fall, will allow him to better express himself. “It’s been a long time coming and we worked really hard get it,” Sbraga told Grub Street. “We want to create something that’s different. Something that’s going to make an impact on Philadelphia.”

Sbraga said the space, which used to house the short-lived and critically panned Chew Man Chu, will be reconfigured and refreshed. It will seat roughly 60, with additional seating at the bar. He promises a menu — most likely a four-course prix fixe for about $45 — of “things that are familiar, and things that are not familiar.”
