Further Details About State Bird Provisions, Due in Late Fall

We broke the news Friday about former Rubicon chef Stuart Brioza and wife/partner/pastry chef Nicole Krasinski’s new project, State Bird Provisions. They’re moving into a fairly raw space behind the Fillmore Auditorium at 1529 Fillmore Street, and as the Scoop now reports, they’re aiming to do something fun and casual, with a small-plates focus and just 50 seats. “I think the expectation from us is to do a higher end restaurant,” Brioza says. “That’s in the cards for sure, but first we wanted to just cook and do something fun.” The price range is going to be low, with dishes ranging from $2 to $15, inspired by hors d’oeuvres parties the pair has been doing in the last couple of years as private chefs. And here’s the story on the name: It’s a riff on one of Brioza’s signature dishes at Rubicon, the crispy spiced quail — which happens to be California’s state bird, and which will, obviously, show up on the menu here.
