Eric Perlmutter and Eddie Bergman, the E and E behind the midtown steakhouse opening July 7 on the ground floor of the Pearl Hotel, have a modest goal: to make the ever-popular meat-and-potatoes format more accessible, with all five cuts of beef coming in under $35, including a side. The menu also extends a bit further than other red-meat temples, featuring items like grilled-romaine salad and house-smoked salmon, and encourages diners to customize their sirloin or strip with mix-and-match sauces and optional add-ons like a poached egg. The 110-seat space is intended to feel homey and warm; come winter, the working fireplace should help in that regard.
