Duskie Estes and John Stewart Take Home Queen and King of Porc Prize at Grand Cochon

Sonoma’s own Duskie Estes and John Stewart of Zazu, the champs from Cochon 555 Napa in March, bested the competition at Sunday’s Grand Cochon in Aspen taking home the dual prize of Queen and King of Porc. Chefs each had to make three separate pork dishes, and the pair triumphed with a Buffalo-wing-style pork trotter topped with fresh herbs; some delicious sounding pork buns; and bacon waffles with bacon ice cream — presumably made from their own Black Pig Meats. Among the chefs they beat were our own Matt Accarrino (SPQR), Brad Farmerie of Public in NYC, and Chad Colby of Mozza in LA. And because the Cochon pork tour never really stops, the two move on to compete in the “All-Star” event in Las Vegas in July.
