Chefs Weigh In On the Charcoal vs Gas Grill Debate

Alton Brown took to the Twittersphere today with an old Italian adage that states: “Even an old boot tastes good if it is cooked over charcoal.” Can the same be said for things cooked on a propane grill? Philly Food Lovers attempts to get to the bottom of the age-old burning question of charcoal or gas? And hits up some notable experts in the quest. Talula’s Garden’s Chef Chef Michael Santoro swears by the Big Green Egg, a charcoal grill, while Down Home Diner’s Jack McDavid goes so far to say that anything less than charcoal is not “true grilling.” But fellow Reading Terminal Market maven Bill Beck, from Beck’s Cajun Cafe, offers a compromise: a gas grill used in conjunction with woods chips! There’s no word on how it makes old boots taste though.
