Speaking of French bistros in Williamsburg, Zeb Stewart of drink dens Hotel Delmano and Union Pool has hired a new chef, Charles Brassard, to helm the kitchen at his other place, Cafe Colette. Brassard worked under Bill Telepan at Judson Grill, and was sous chef at Michael Lomanaco’s Porter House, and, more recently, at Little Giant.
