With so many new openings at the Waterfront, it’s easy to overlook the quieter charms of 606 Congress at the Renaissance Boston Waterfront — one of the more inventive hotel restaurants in town. (We’ve got to hand it to a hotel dining room that puts beef hearts on the menu.) We stopped by to have a look at Chef Rich Garcia’s summertime menu, which debuts today; here are some highlights. And be sure to browse the full menu below.

606 Congress Menu

A refreshing octopus carpaccio is accompanied with sea urchin and drizzled with ceviche sauce.
This elaborate burger is crowned with foie gras and truffles (naturally!), and splashed with Madeira sauce.
It’s kinda like a deconstructed deli sandwich (with fish, of course!): rye spaetzle, Brussels sprout kraut, and whole-grain mustard complete the plate.
Chef Rich Garcia describes this dish as “totally herbacious.” It’s studded with grapes and toasted almonds.
Garcia pauses during lunch service for a friendly photo.
