The O Ya chef might operate one of the most expensive restaurants in town, but Tim Cushman tells Bon Appétit that he has pretty simple needs. More ahead.

The magazine has been checking in with various Beard-nominated best chefs across the country; now it’s the Northeast’s turn. Cushman tells the mag that his ideal last meal would be a “greasy pepperoni pizza, fried clams, vanilla frappe.” We detect a theme here: Craigie on Main’s Tony Maws, also questioned, wishes that chefs would stop needing to be “inventive or ‘innovative.’ What’s wrong with delicious?” he asks.

An old-fashioned greasy pepperoni pizza sounds pretty delicious to us. And, for the record, BA gives Maws the edge to win.
