Excited about the announcement that Jean-Georges Vongerichten is coming to town to revamp The Pump Room? Well, Ian Schrager, the owner of the hotel where the restaurant is located, just told Chicago Magazine that the new project will be “opening on September 12 with everything ready.” This is really strange. Usually owners only give us vague references to the seasons, like “early summer” and “before the next snowfall,” when they announce plans for a new restaurant.
