We just heard from Will Gilson’s partner Aaron Cohen about the duo’s upcoming food truck, The Eat Wagon. According to Cohen, they’re “ramping up” and anticipate beginning daily service toward the end of May. (They did a demo a couple weeks ago in Downtown Crossing.) The truck will serve burgers, hot dogs, and tacos from grass-fed cows. And in the meantime, they’ll preview their wares at MIT’s 150th anniversary (tough crowd!) and at this weekend’s Wine Riot. They’re also planning a few pop-ups, though we’re guessing they probably won’t bring their truck to a hair salon.
