When much-liked Kampuchea closed last August, chef Ratha Chaupoly told us that he was hoping to reopen the Cambodian joint somewhere new. (A point he reiterated when its replacement, Bun & Co., also shuttered.) Well, any breath-holders out there hoping to expedite the process might want to stop into Chaupoly’s Num Pang and offer a helping hand: City’s Best caught up with Chaupoly and he tells them, “At the end of the day, it’s a business.
