Imperial No. 9 isn’t the only new hotel restaurant. On Friday, the Trilby opened in the space that held Scott Conant’s Faustina (and Table 8 before that) until the Cooper Square Hotel changed owners. This effort isn’t led by a celebrity chef; the face (or rather, faces) of the operation will instead be the hotel's managing partner Klaus Ortlieb and James Stuart, former food and beverage manager at the neighboring Bowery Hotel. Designers DD Allen and Michael Pierce have given the restaurant and its outdoor garden a lounge-y vibe, but there is a menu of “European-inspired comfort food” for you to peruse below — it’s served till midnight, with the late-night menu extending till 2 a.m. Breakfast starts at 7 a.m. daily (competition for Peels and its pastry chef Shuna Lydon) and lunch goes from noon till 4 p.m.
