One of the most mentioned Bay Area dishes of 2010, and one that Food & Wine named one of the best of the year, is the vegan charcuterie at Gather. It remains the highlight of the menu at the Berkeley eatery, and today we find a dish demo video from The Feast in which chef Sean Baker talks about his intentions behind the dish, and shows how he makes the various elements you’ll currently find on the board — including a bruschetta topped with vegan “lardo” made out of thinly shaved parsnip cooked in olive oil.
