Heady Tacos

When we heard Alex Stupak would be doing headcheese tacos at Empellón, we remembered Akhtar Nawab was also playing around with them, and wondered what he’s up to at La Esquina these days. Turns out, this week’s special taco is a “cabeza” one of braised cheek, jowl, ears, tongue, salsa macha, and smoked posole. Another special: Housemade rabbit sausage, confit leg, peyotes (chestnuts), and guajillo chiles.
