Starting Friday and running through April, Santa Monica’s Drago plans to offer a spring tasting menu dedicated to all things duck meat for $59 a person. Exec chef Evan Gotanda’s menu di anatra starts with foie gras torchon and 63 degree duck egg and centers on duck confit risotto and duck breast with collard green and farro ragout, with the dessert de résistance a peanut butter foie gras roulade.
