As we told you a couple weeks back, the restaurant and wine bar known as B-Cubed or B3 or B³, depending on who you ask, will be going through a bit of a transition this week. They didn’t end up having to close, and tomorrow they’ll be opening with a new food menu (including some tasty sounding bourbon-brown-sugar bacon and potato croquettes) and a renewed focus on their wine tasting program. Co-owner Johnny Gato a.k.a John Prudenti explains that when they opened, they got a little off-track and became known as a beer-and-burger place, which was never the point. The new focus should appeal to people who are looking to discover some new high-quality, small-production California wines, and to have a unique tasting experience within city limits.
It’s an evolution in the concept of a wine bar, and we’d say a welcome one, much the way Barrique is riffing on the genre with their blind tastings. Gato elaborates, “There’ll be a set price for tasting all the wines from winery X or Y, and you can eat if you want, which is a critical component missing when you’re out wine tasting. Food breaks up the ‘hit,’ so to speak, of tasting wines. That is the original concept of B³ and is one which we never really were able to achieve. Kind of like a rogue Press Club, with wines constantly changing.”
To aid in the group-tasting experience, they’ve installed a new 29-seat tasting/community table built on top of 100-year-old French wine presses, which will be used for weekly winery and brewery visits and tastings. As discussed earlier, there will still be thirteen to seventeen value-priced wines by the glass, and there’ll be a happy hour with glasses starting at $4. There will be one featured winery and one featured brewery highlighted each month, with multiple pours from each.
