Granted, we have had fun mocking Speck and its perpetually delayed opening, but all along we never imagined the severity of setbacks Shola Oluloyo has encountered in the ten months that he’s been working on it. In a lengthy dispatch posted to his Studiokitchen blog last night, he breaks down — in excruciating detail — the “900 major things” he’s had to contend with to get his restaurant ready for business. It seems everything from baffling city codes and an energy management system that no one knew how to install to a faulty gas line that nearly blew the place up, has foiled Olunloyo’s every effort. In one passage he likens building codes to viruses, saying they “are actively mutating during construction.” In another he says “contractors are mostly chiropractors trying to do gene therapy.” [Studiokitchen]
