After Ryan Poli announced he was leaving Perennial for Tavernita, Kevin Boehm, the co-owner of the Boka Restaurant Group, hinted that they were getting a “celebrity chef” to take the position. After teasing us for the past week, Boehm finally released this YouTube clip which declared that Paul Virant will be the new chef and co-owner, and that the restaurant will be retitled Perennial Virant. This was pretty surprising. Virant has garnered some serious acclaim over the past few years at Vie, which is in the western suburbs of Western Springs. Before that, he worked at Charlie Trotters, Everest, and Blackbird. Check out the video clip below.
