Last we saw chef Micah Fields, he had just opened Hash at The Hotel Erwin in Venice and was cooking up a great wagyu burger in a cast-iron pan. Today, the Standard Hotel Downtown drops the word on us that this local “Chefs Who Surf” co-founder, Cordon Bleu grad, and food tattoo-collector (see above) has joined the restaurant as its exec chef. The seafood-centric toque has plans to rejigger the menu, add his own specials, and possibly introduce tasting menus at the hotel restaurant, which we’ve often enjoyed but look forward to trying anew now that Fields is in the kitchen.
