The latest edition of Off the Menu brings some curious morsels of chef news: Shlomi Biton has left Cascabel and its new sister Mahjong Dumplings after a few weeks and has been replaced by Daniel Van Heusdenp; Michael Merida is the new executive chef at Mia Dona; and, most intriguing, John DeLucie has taken over the former home of Bruno Jamais and will turn the Upper East Side town house into a “classic New York-American restaurant.” The announcement comes amid reports of ownership squabbles at the Lion, but there it is: DeLucie now has two classic New York addresses in his pocket, matching his former boss at the Waverly Inn, Graydon Carter! Unless of course Graybee buys Elaine’s.
