It’s been quite the week for Giuseppe Tentori, who is getting ready to open GT Fish & Oyster in the next month. Time Out Chicago stuck his face on the cover of its latest issue with the title “The Making of a celebrity chef,” and now comes what is easily the most well produced short video about interviewing waiters and bartenders that we’ve ever seen. Boka Restaurant Group owners, Kevin Boehm and Rob Katz, are both there, along with chef Tentori, and they certainly didn’t pull any punches. Tentori notes that they interviewed “some bad ones,” and the camera crew wasn’t shy about showing faces. So, what’s the moral of this story? According to Boehm, “It just kills me when they don’t know anything about what they are applying for.” [GT Fish & Oyster]
