What to Eat at Maude’s Liquor Bar, Opening Tonight

We’ve been talking an awful lot about closings recently, so it’s nice to have a big new opening announce. Maude’s Liquor Bar is opening tonight in the West Loop at 4:30 p.m. The latest project from Gilt Bar’s Brendan Sodikoff and chef Jeff Pikus (who has recently come from Alinea), is going for a rustic French theme. When we called, they claimed that this is still a “soft opening,” so the menu would probably change in the next week. But the one that we are looking at right now is quite a sight. The rustic French label was no joke. Cassoulet, country terrine, and a short rib Bourguignon all make an appearance. Plus, the cocktail menu features smashes, which cocktail historian David Wondrich gleefully describes as “a quick bracer, rather than a slow-sipper: you don’t hear of Smashes coming with straws.” Sounds awesome.
