The Brooklyn Paper reports that Il Buco co-founder Alberto Avalle and his partner Felipe Avalos are opening a bakery, restaurant, and specialty foods complex at 291 Kent Avenue, near South 2nd Street, in April. Avalos says Pan y Rosas will make “the best damn bread in New York” with the help of a baker from Balthazar and Bouley, and a couple of imported wood-burning ovens. There’ll also be a “80-seat trattoria, which will feature Mediterranean-style cuisine from Umbria in Italy and Galicia in Spain, and include a roof deck with striking views of the Empire State Building and the Williamsburg Bridge.”
