Hayes Valley’s Proxy Development Rolls Out Soon With Smitten Ice Cream, Ritual, and Revolving Pop-Up Venue

That Proxy thing in Hayes Valley, which we mentioned a while back, is soon becoming a reality and will include not only the aforementioned Pizzeria Delfina offshoot and Biergarten (from the Suppenkuche guys), it will also feature Smitten Ice Cream, Ritual Coffee, 4505 Meats, and it will have a space that can be used by revolving chefs who want to bring in pop-up concepts for as long as a few weeks, or as little as a night or two. As SFoodie reports, the idea comes directly from the project’s design firm, Envelope Architecture + Design, who says they’ll be funding and operating the pop-up kitchen themselves. The idea is to bring in chefs from other cities, or chefs just looking to try something new, or “young, up-and-coming chefs now working in other people’s kitchens.”

The first two containers to arrive on the site — the design, since it’s meant to be temporary, comprises a group of modified shipping containers, some stacked on top of one another — will be for Smitten and Ritual, and they may arrive by late January. Next up will be Biergarten, which should open by March, followed by 4505 Meats, the revolving pop-up venue, and lastly, Pizzeria Delfina, who are putting in a wood-burning oven.
