Bill Esparza’s Tacos 101 Now In Session

Bill Esparza, L.A.’s preeminent expert on Mexican street eats via his Street Gourmet L.A. blog, drops a special educational series over on L.A. Taco called “Tacos 101.” Starting, naturally, with maize, Esparza details the historic origins of the taco in the cuisine of pre-hispanic Mexico, as well as the very definition of the word (we always thought taco just meant taco), and the difference between L.A.’s tacos, which he rates as “poor to mediocre,” and the superior type you find in Mexico.
