First Look at Yuba, Opening Next Week

What was once the Korean restaurant Sura: The King’s Meal, is now Yuba, a self-described modern Japanese restaurant with two former Masa Takayama understudies, George Ruan and Jack Wei, running the show and sushi bar. The namesake tofu skin comes in pork-dumpling form as well as grilled with sweet miso. And while the ex-Masa men are going for a laid-back East Village vibe, they are not afraid to luxe it up a bit with Wagyu skewers, foie-gras steamed buns, an uni risotto of sorts with white truffles, and caviar-topped oysters.
