Granted, we're not exactly craving gelato in post-blizzard New York City. But still. There's a whole school in Italy devoted to the stuff. It's called the Carpigiani Gelato University and its weeklong courses will teach you all the intricacies of the frozen dessert. Yes, people go in order to learn how to make it, but the real draw appears to be the cash you can make by opening your own gelateria: They're profit machines!
