If you thought preparing a holiday feast that your entire family will be happy with was going to be rough, you should see the challenge that awaits Top Chef champ Kevin Sbraga in the kitchen on Christmas. Born of an Italian-American mother and an African-American father, Sbraga strives to incorporate his multicultural upbringing into holiday meals, while honoring the Puerto Rican holiday traditions that his wife Jesmarie grew up with. This means the holiday starts with a huge sofrito-marinated roast pork, rice and beans feast with his in-laws on Christmas Eve, according to the interview he gave Nation’s Restaurant News, followed on Christmas day by pasta dishes and other Italian specialties, turkey, more pork and collard greens at his father’s house, according to the interview he gave NPR’s Tell Me More earlier this week. “There’s no pleasing everyone,” he told Tell Me More about trying to cover all the bases at once. “All you can do is try your best. Embrace the other cultures and just have a good time with it.”
