Hasn’t every year for the past ten years been about pork? It’s been a long, long time since another protein even came close. But what was fascinating this year were the many different ways pork was presented. To be sure, there were no simple pork chops plopped on a plate. Whether it was crispy pig face (courtesy of the Girl & the Goat), pork live pate (The Purple Pig), or even the perfect topping for a pizza (Prairie Fire), chefs were able to transform the humble pig into something truly extraordinary.
