Was everbody feeling dough-deprived around here or something? In the last month alone, we’ve seen the introductions of FarmShop, Black Cat, Simple Things, L’Epicerie, Bouchon Bakery’s pop-up, expansions of Sweet Lady Jane and Porto’s, a move for Mani’s, and a new depot of La Monarca. It’s almost as if a power vacuum was created in the world of bakeries when Le Crossaint crumbled at the start of the summer. So what’s the latest offering?
Squid Ink spies the newly opened Proof Bakery in Atwater Village. Here owners Na Young Ma and Yeekai Lim are selling Four Barrell coffee and Intelligentsia tea amongst a Frenc vibe, with offerings from pastry chef Crystal White of “palmiers, assorted tea cakes, coconut macaroons, compact croissants and pain au chocolat filled with Valrhona chocolate,” as well as meringue, fruit scones, tarts, teacakes, cake by the slice, and daily servings of changing savory pastries. Sounds like a real neighborhood place, as the duo collaborated with Lever’s Kathryn McCullough and Jonas Bergkvist to overtake the old Toni’s space, which was also, yup, a bakery!
