Paul Kahan to Open Butcher Shop in West Loop


We knew something was up, and now it’s official: Paul Kahan and his partners Donnie Madia, Terry Alexander, and Edward Seitan, just signed the lease this morning on a new butcher shop across the street from The Publican. Let’s consider this a trend. The shop will sell fresh meat, make sausages, cure charcuterie, and even serve breakfast and lunch. The Stew broke the news just moments ago, and notes that the space probably won’t be open for another 6 to 10 months. The name hasn’t yet been decided, though “it’ll have the name ‘Publican’ in there.” Still, very exciting way to start off the week. [The Stew]
