In our preview of expected fall openings, nothing got us quite as excited as the prospect of Red Medicine, the re-imagining of Vietnamese cuisine from pastry chef phenomenon Jordan Kahn, a Per Se, Michael Mina, and Alinea vet, along with partner Noah Ellis. We leapt on the opening last night and were not disappointed by what Kahn explained to us in August would be his “homage to our favorite little Vietnamese spot.” Every detail (besides the crushed ice in our cocktails) blew the senses away, from foie gras banh mi transformed into finger sandwiches to the tiny bits of pomelo coming apart in a brown butter soy milk broth bobbing a piece of wild striped bass. The market-driven menu is subject to some changes, but the breathtaking plating and clean, multi-tiered flavors will no doubt remain powerful lures in a stretch of the city without a lot of destination restaurants.
