Per Se Realizes New Yorkers Can Be Kind of Flaky, Changes Reservation Policy

All you poor planners who up till now haven’t been able to try some oysters and pearls: Your time has come. Starting Saturday, Thomas Keller’s Per Se will only take reservations one month out, as opposed to the current two-month policy. The reason: “To be more in-tune with the faster-paced NYC dining scene,” according to the press release. Really poor planners can still opt for the casual salon area, which remains reserved for walk-ins.
