Michael Yeamans Is Back in at Rouge and Cranking Out Truffle Dishes

Last we mentioned Rouge, interim chef Matt Levin, who was moonlighting there while opening Adsum, and Trevor Bundy, the chef he chose to run it in his pending absence, had both exited the restaurant. Word then was that the Rittenhouse Square stalwart’s old original chef Michael Yeamans was moving back in to replace them. For those keeping score at home, Yeaman served as chef at Rogue way back in its Neil Stein heyday. He’s since seized the kitchen’s reins and is announcing his arrival with a new truffle-focused menu that’s available through the end of December. Yeaman will offer a housemade fettuccine with shaved white truffles, butter and parmesan fondue, white truffle risotto and a Truffled Rouge Burger, shaved white truffles, white truffle butter, white truffle mayonnaise, spinach, chanterelles, and fontina cheese and truffle fries nightly, along with a daily changing selection of other truffle dishes. Some highlight include lobster and truffle macaroni and cheese with truffled breadcrumbs and black truffle butter, filet mignon with wild mushroom and truffle duxelle and seared foie gras, and housemade celery root ravioli with black truffles and braised oxtail.
