Here’s what we learned from a new Esquire Thanksgiving survey of 31 chefs from around the country: Bryan Voltaggio once ruined sixteen turkeys in one evening by overcooking them; a number of chefs hate turkey, and suggest alternatives like fried chicken or prime rib; Scott Conant says “the balance of sweet and tart” of canned cranberry sauce “can’t be replicated”; 23% of chefs recommend drinking a whole lot to get through the meal; and Dallas chef Stephen Pyles recommends cooking a turkey sous-vide before roasting it for ten minutes.
