Alex Moreno, the L.A. native and former “Van Hagar” chef who has turned the pods at Casa into a Downtown destination for intelligent, seasonal takes on Mexican cuisine, is remixing standards from the city’s taquerias and favorite restaurants. He already has a mulita de carnitas on his menu that adds manchego and peaches to La Taquiza’s recipe (with permission) and plans to approach Casita Mexicana, Tinga, and El Mexicano, an old family favorite of the chef’s, to adapt some of their signatures dishes in the coming future.
